Look at all of these Spicy Breakfast Sandwiches. They really just have everything a good breakfast needs: sausage, eggs, sauce, some spice, and a couple of waffles. I know there are a million variations to these waffle breakfast sandwiches, but I just had to make this spicy chorizo version.
My original Waffle Breakfast Sandwiches had a fried egg, but I think they actually work better with scrambled eggs. But really, you do eggs whatever way you like. The showstopper here is the chorizo. I just love chorizo, it’s smoky and spicy and slightly tangy. It’s a delicious combination. If you can’t find good quality chorizo, you can use ground pork and add your own spices and a dash of vinegar. There are lots of recipes for chorizo spice mixes online.
Just like my original recipe, these are the perfect make-ahead breakfast. This will make five large breakfast sandwiches that you can wrap and keep in the fridge. In the morning, grab one and warm it up in the oven or air fryer. So easy, and SO filling! These will keep you full til lunch.

Spicy Breakfast Sandwiches
While you’re making the waffles (just don’t forget about them), heat up a skillet over medium heat.
Divide the chorizo into 5 large, thin patties.
Cook them in the hot skillet for about 4 minutes per side.
Lay out 5 waffles to be the bottoms of your sandwiches. Top each one with one of the sausage patties.
Cook your eggs however you’d like. Scrambled eggs work better if you’re prepping them ahead of time, but I like yolky eggs if you’re eating them right away. Top each sausage patty with one egg.
Whisk together the mayonnaise, chipotle, and garlic until smooth.
Spread the sauce on the remaining waffles, and place them on top of everything to make a sandwich.
Eat them right away and have the best breakfast ever, or wrap them in foil and refrigerate them until you’re ready for them. To re-heat them, pop it in the toaster oven (in the foil) for about 20-25 mins at 375.
