Once upon a time I lived in a giant townhouse in Nashville, TN with some of my best friends. It was when we were all single and young and poor and it really was the best of times. People were at our house ALL the time! We had BBQs (2 grills!) and parties and all sorts of shenanigans. Whenever one of us had a crush on someone, we would all throw a big game night and invite everyone we knew. All hands on deck, that's the kind of friends we are! It was so much fun. We got really good at throwing together a bunch of yummy party snacks.
One of our standard recipes was the salsa from America's Test Kitchen. It always turned out perfectly, and was so much better than store-bought. And when you're in your early 20s, homemade salsa is quite an impressive dish to serve. Side note: I once made it for my dad's retirement party, and I'm not sure what happened, but it turned out to be way too spicy. I served it without tasting it, and about burned an older lady's mouth off. ooooops! Taste food before serving it to strangers...
Anyway, when I started pickling veggies, I was trying to think of what to use all these pickled jalapeños for. Of course salsa came to my mind. Then I decided to make a whole pickled Salsa Mix with jalapeños, onions, and garlic! Pickling takes some of the bite out of the vegetables compared to using them raw. It also infuses the vinegary tang to the salsa, making something a little unique.
Once the veggies are pickled, just throw all of the ingredients into the food processor and blend. It is as simple as that to make! I recommend starting with just 1 or 2 pieces of jalapeño. Since all of the vegetables have been pickled with the peppers, even the garlic and onions will be a bit spicy. Adding tons of jalapeño will be extremely spicy. If you're very sensitive to spice, try it without any jalapeño at all.
Last but not least, today marks the kick-off of our 21 Day Sugar Detox!! Yay! While this salsa is totally compliant, sadly plantain, corn, cassava, potato, and sweet potato chips are all off limits. That said, this would make a great topping for taco salads or burrito bowls, or even over eggs for breakfast! Get creative, and good luck to all the detox participants!
