Hi friends! Look at me, writing a blog post! I know it’s been a while, and I’ve actually been testing and photographing recipes that I never posted, haha. But I’m back! I’ve been working through some difficult things, so I appreciate the time away. But I’m feeling more and more like myself again, or perhaps like my new self, so I’m emerging a bit more. I was eager to get back to this space and feel inspired again.
Now, Easter was yesterday, raise your hand if you’ve got some leftover ham! We have a lot! Thankfully ham is super versatile, great for breakfast, on pizza, in this Instant Pot Hambone Soup . It’s also easy to freeze for later. But, I also love ham salad, and it’s seriously perfect for meal prep and packing into lunch boxes.
This is my mom’s recipe for ham salad, and I love having a batch of this in the fridge. I like scooping it up and eating it on crackers (or pork rinds for a keto option). But we often have it on top of greens for a quick and easy lunch. It’s so hearty, filled with both ham and eggs, it’ll fill you up!
The one downside is that this really requires a food processor. You could make it with a knife, like my grandma used to. But in the food processor this comes together in just a couple minutes with a handful of simple ingredients. I hope you make this with some of your leftover Easter ham!
Mom’s Ham Salad
24 oz. ham, cooked and cut into chunks
2 green onions, roughly chopped
4 hard boiled eggs, peeled and roughly chopped
3/4c-1c Easiest Mayo
1/2c sweet pickle relish
1t dry mustard
In the bowl of your food processor, add the ham and green onion. Processes it until everything is in very small, uniform pieces, somewhat shredded.
Add the eggs and process again until they’re finely chopped.
Add the mayo, relish, and dry mustard. Process it just enough that everything is “stirred” together and well combined.
That’s it! Store in the fridge and serve cold.
