All of my best recipes are stolen from my Mom. That's how life goes, right? She makes something yummy, we grow up eating it our whole lives, and then we steal it and make it our own. Well this chili is so easy that it's worth stealing! Can I get an AMEN for slowcooker meals?? It is slowcooker season!
Mom's original recipe called for corn, so I switched that out for sweet potatoes, but other than that, it's all original. This is the kind of hearty chili you make to warm yourself up on snow days, or to slather on top of baked potatoes on Game Day. It's just the perfect chili. No fancy cooking methods or cuts of meat. Defrost that grass-fed ground beef you've got in the freezer, and you're in business!
To make this recipe even easier, it doesn't really matter how long you cook it. I mean, you want the sweet potatoes to be tender, but you can cook it for 4 hours, or 6 hours, or 8 hours, or whatever! Whatever time you have, just cook it for that long and you'll get some yummy chili at the end of it.
What's your favorite fall slowcooker recipe? Chili is hard to beat for me, but I also love a good, tender pork roast. Basically anything that produces lots of meals for little effort, that's my kind of dinner!
1 lb. grass-fed ground beef
1 medium yellow onion, diced
1 red bell pepper, diced
1 jalapeno, seeded and minced
1 large sweet potato, peeled and cubed
14 oz. canned chopped tomatoes
8 oz. canned tomato sauce
2T chili powder
1/2t black pepper
- In a large pan, sauce the ground beef. When it's nearly done cooking, add the onion, and peppers to the pan and cook until they soften.
- Dump the meat and veggies into a slowcooker, and add all remaining ingredients.
- Stir everything until it's combined, and set the slowcooker to low heat for 4 hours or more.
