I wanted to create a salad that was full of great fats. That's not something you usually think of with salads, but as my percentage of carbs decreases during the 21 day sugar detox, I've got to eat more fat to keep from feeling hungry all the time. I am also trying to get my body to burn fat for fuel instead of glucose, both body fat and dietary fat. I love these Italian flavors, and the meats, olives, and avocados provide plenty of filling fat. The veggies provide a fresh counterpart, and the pickled fennel brings that bright vinegar flavor. The best part about salads, is that you can sub in and out whatever you prefer. If you're AIP, then sub ham and prosciutto for the salami and pepperoni. If you don't have the pickled fennel ready to go, try some marinated artichoke hearts. And if you can have dairy, you should definitely add little fresh mozzarella pearls. YUM!

This hearty salad will leave you full and satisfied! It is the perfect lunchbox salad, as it requires exactly zero cooking, or even warming up! It is a snap to throw together in just 15 minutes! Want to cut the time back even further? Don't bother chopping the olives or tomatoes! I use Applegate Farms brand meats due to their clean ingredients. Neither contains any sugar. However, there may be great brands in your area as well, so use whatever is available to you!
8c mixed greens
1/2c kalamata olives, chopped
1/2c grape tomatoes, halved (omit for AIP)
1 avocado, diced
1/2 cucumber, thinly sliced
1/2c pickled fennel
4 oz. pepperoni (swap for ham/prosciutto for AIP)
4 oz. salami
- Wash vegetables, and chop all ingredients.
- In a large bowl, add all ingredients one at a time, or tossed together, it's up to you!
- If you're serving it right away, go ahead and toss with the dressing. If you'd like to save some for leftovers, I recommend only dressing the portion you eat.
