Alright guys, it's Tuesday and nobody wants to make dinner. We're coming off the Cinco de Mayo bloat, so we need some veggies, and it's so close to summer break I can hardly stand it. Well I've got the solution for you. This delicious, beautiful meal is all thrown in the oven on one sheet pan, and only has to cook for 10-12 minutes. What a simple way to get some seriously healthy and yummy food onto the table for your family.
I love a sheet pan dinner! Throwing everything onto one sheet pan to cook while I set the table and clean the kitchen is the dream. By the time dinner is served, the kitchen is clean and you can just relax and enjoy your meal. Also, alllllwwaaayyysss make extra so you can pack that straight into some lunch boxes to take to work the next day.
Just because this meal is quick, doesn't mean it's boring. The salmon has a spicy, sweet, tangy honey lime glaze that is perfect on salmon. The asparagus cooks at the same time as the salmon so you have a complete meal. I just sprinkle it with salt and pepper, but feel free to dress them up however you'd like! I mean, garlic is generally always a great addition.

Honey Lime Salmon Sheet Pan Dinner
2 lb. wild caught salmon filet
1 bunch asparagus
salt and pepper
zest of 1 lime
juice of 1 lime
1t garlic powder
1t chipotle powder
Preheat the oven to 425 and line a sheet pan with parchment paper
Put the salmon filet in the middle of the sheet pan and spread the asparagus around the salmon.
Drizzle the asparagus with oil, and then sprinkle both the asparagus and the salmon with salt and pepper.
Whisk together honey, lime zest and juice, garlic powder, and chipotle powder in a small blender or bowl.
Pour the honey mixture over the salmon, and spread it to coat the salmon evenly.
Bake the salmon and asparagus for 10-12 minutes.
