Happy New Year!! It’s 2019! You know what that means? It means it’s finally here! Diane Sanfilippo’s new book, Keto Quick Start, releases today! I’ve had the great opportunity to be on the launch team for the book, so I’ve had my copy for a couple weeks. I’ve been reading through it, and I can’t speak highly enough about it. There is so much information packed into this book, including 9 chapters on how to use keto to improve your health, as well as meal plans, shopping lists, incredible graphics, helpful tips, and over 100 recipes! Keto is something I’ve thought about for a long time. I have done Diane’s other program, the 21 Day Sugar Detox, a couple times and loved it. I am a life-long sugar and refined carb addict. Baking has always been a hobby, and I can’t really think of a better hobby than one that results in warm chocolate chip cookies and ganache-filled cupcakes. I mean, right? When I made the change to a paleo diet and ditched lots of refined carbs, it helped. But let’s be honest, cookies and coffees and treats sweetened with maple syrup and honey are still delicious. So even on paleo I found a way to get my sugar fix. I know my body reacted well to the sugar detox, and I was interested in using that to springboard into keto, but I just felt like I needed to do so much research to do keto “the right way.”
So when I heard that Diane was writing a book on Keto, I was thrilled! Her books are all trusted resources in our house, and her recipes are simple and flavorful. She loves food as much as I do and has a balanced and well-informed view. I knew that she would save me hours and hours of research, and give me the confidence to dive into keto. I was so right. Keto Quick Start is the perfect guide that will equip and support you in your keto journey. It is well balanced and informative and makes transitioning to keto seem so much more reasonable than I’d originally thought.
I’ve tried several recipes from the book, like the Spaghetti Bolognese Bake, White Chicken Chili, Satay Skewers, and these delicious Hidden Veggie Ranch Burgers. They are all delicious, and my whole family enjoyed all of them!! These recipes are all part of the nightshade-free options in the book. My husband recently cut out nightshades, so I love that Diane’s included an entire week of nightshade-free meals. So to celebrate the book’s release today, I am going to share the recipe for these awesome burgers. Keto or not, you’re going to enjoy these flavorful burgers.
Hidden Veggie Ranch Burgers
2 med zucchini, grated (about 1c)
2 lbs. ground chicken thigh
1.4c chopped fresh chives
3T Ranch spice blend (recipe in book)
2T chopped fresh parsley
zest of 2 lemons
1/2t sea salt
1 head butter lettuce, leaves separated
ranch dressing (Diane has a dairy version in the book)
Place the grated zucchini in a paper towel or cheesecloth and squeeze out all the excess water.
In a large mixing bowl, combine all of the burger ingredients with your hands. Form the mixture into 8 equal-sized patties.
Preheat a grill or grill pan to medium-high heat. Grill the burgers for 5-6 mins per side, until the chicken has cooked through and no pink remains. You may need to work in batches, depending on the size of your grill or pan.
Assemble the burgers, place a burger on a layer of lettuce leaves, add ranch dressing, bacon, and tomato (I skipped this to keep it nightshade-free) and top with more lettuce.
