Ya’ll it is the heart of summer and it’s just hot everywhere! I mean, I live in AZ so it’s always hot. Buuuut, no matter where you are, this drink is just the cure you need for this heatwave. I’m not a big drinker, there are just not that many kinds of alcohol that I enjoy. But a mojito? Yes, please! They’re so tangy and refreshing. And really, what screams “tropical paradise” more than pineapple??
Grilling the pineapple in this recipe brings out the delicious sweetness. This takes less than 10 mins, but I recommend grilling a bunch at once. Just keep it in the fridge until you’re ready to make a drink.
Want another summery mojito? Try my watermelon version. But if you’re already grilling out, then you’ve got to try this version. Throw the pineapple spears on the grill with your burgers and brats. Traditionally mojitos are made with sugar or simple syrup. I made simple syrup out of honey, because it’s even easier than using sugar. And better for you. Just mix equal parts honey and hot (not boiling) water, and you’ve got a honey simple syrup. Pop it in the fridge and it’s ready when you are.
I hope you give this a try this summer. Once you’ve got the pineapple and simple syrup prepped, these are a snap to throw together, and truly so freshlingly delicious.
Grilled Pineapple Mojitos
1/2 of a fresh pineapple, sliced into 4 wedges
coconut oil spray
2T hot water
1 1/2 limes, sliced into wedges
60 mint leaves
8 oz. white rum
3c sparkling water (try pineapple, lime, or original flavor)
Lightly spray the pineapple wedges with coconut oil spray, then place them on the grill at 350 degrees for 3 minutes per side (9 mins total).
While the pineapple grills, make the honey simple syrup by whisking together the honey and hot water. Let the pineapple and water cool in the fridge before making the drinks.
When it’s time to make the drinks, slice the pineapple wedges into smaller pieces. In a pitcher, muddle the pineapple, mint leaves, and lime wedges all together.
Over the muddled fruit, pour the simple syrup and rum. Stir everything together and top with the sparkling water.
To serve, pour over ice and enjoy!
