I think Denver might have the best gluten-free options of any city. There was a delicious restaurant that had gluten-free cuban sandwiches that were amazing. The bread was cuban-style, not just regular white bread or a bun. It was perfect, and I’d get a side of plantain chips. It’s one of the meals that I’ve missed since moving to Tucson.Read More
It’s almost summer! At least here in AZ, summer is practically here already. Super blue, sunny skies, it’s my absolute favorite. Everyone that has a garden gets an overwhelming amount of zucchini in the summer, so here’s a solution! Sweet, moist, zucchini bread! I’ve actually got a couple more tasty zucchini recipes headed your way, but what better way to get started than with classic zucchini bread?Read More
Wow! I didn't post a single recipe in August! Moving and being sick and starting a new job really just zapped my energy a lot more than I had hoped or expected. But I finally have a 3 day weekend with no plans and I feel like I can finally get my feet under me again. We've been pretty busy doing lots of fun things like checking out local restaurants and pre-season football games. Today I felt like I should ride my bike (I'm training for a triathlon) and go to the farmer's market, but it's a rare rainy day in Arizona. Thankfully, this rain gave me permission to just relax, which was honestly a relief.Read More
This blog has been in existence for far too long without a guacamole recipe. How did that happen? Guacamole is life! So this is my favorite guacamole recipe. I call it Green Guac because everything that goes inside is green! And because of alliteration.
It's super basic, but I think I'm a purist. I don't want pineapple or mango or tomatoes in my guac. Maybe some bacon, ok fine, I'd eat that, but that's where I draw the line. Bacon.Read More
Did you grow up eating French onion dip out of plastic tubs? I'm not sure there were actually any onions in it, but that didn't stop me from plunging in there with my potato chips! This winter I got a random craving for French onion dip. I'm not sure why, I haven't had it in years! I knew that with all the dairy the plastic tub version wouldn't be good for me anymore, but I wasn't even quite sure what would be required to make it myself.Read More
When I got my food sensitivity test results about a year ago, the result I was most shocked and disappointed about was eggs. I ate eggs basically every day. They're the perfect, easy, inexpensive food. I loved eggs! It wasn't easy, but I went without them for over 6 months to allow my gut to heal.
Several months ago I tried reintroducing eggs. It went moderately well, and I have discovered that I can eat up to 1 egg at a time without digestive distress! This is so exciting because I can make a breakfast taco, or have baked goods that contain eggs, or even go out for breakfast!Read More
