When I was brainstorming some summer recipe ideas, I asked my friends what they'd want to see over the summer. One mentioned that she can get into a salad rut. I completely agree. I literally throw a handful of greens and a handful of shredded carrots into a bowl, and I top it with whatever dressing I have in the fridge. While it may qualify as a salad, it is not delicious.
So I thought "what food do I like to eat that I could transform into a salad?" First up: Burgers and Fries...obviously. Whenever I'm really, REALLY hungry I crave a burger and fries. And who doesn't love a big burger loaded with all the yummy toppings? My favorite toppings are avocados, bacon, and ranch dressing. I mean, exhibit A: Loaded Burgers.
So I took all of my favorite burger toppings and threw them on some greens for a super hearty, flavorful, and fun summer salad. I like to cook the bacon, potatoes, and ground beef in advance. Then when it's time to throw the salad together, I just warm it up and eat. Of course I had to add my favorite Burger Spice to give everything some extra flavor!
Grab some greens at the Farmer's Market, because I've got more hearty, yummy, unique salads coming your way this summer!
Burger and Fries Salad
Pre-heat the oven to 375. Peel and dice the potatoes and toss them with 2t Burger Spice.
Put the potatoes on a baking sheet, and bake them for 30 minutes, tossing half way through.
Lay the bacon out on a rimmed baking sheet. When there are about 12 minutes left on the potatoes, put the bacon in the oven to cook, too. It should cook in 12-15 minutes. Then remove the bacon onto some paper towels until it's cool enough to touch and chop.
Heat a large skillet over medium-high heat. Brown the ground beef.
When the beef is almost cooked, add the remaining 2t of Burger Spice and combine.
Once the meat and potatoes are all cooked, and the veggies are chopped, assemble the salad.
Start with greens, and top with the meats, potatoes, pickles, tomatoes, avocado, and green onions.
Drizzle everything with the ranch dressing.
