Who loves breakfast? I DO! Not necessarily at breakfast time, because let’s be honest, I’d rather be sleeping, but I’ll eat waffles and pancakes and stacks of bacon and home fries and poached eggs or fried eggs and fresh fruit any time of the day! And these Breakfast Fries are the perfect weekend breakfast, no matter what time of day you wake up.
This is one of those recipes that I saw the name on a menu somewhere and thought “what a genius idea,” and decided to make my own version. I’m so glad I did. These are delicious. When I re-heated the leftovers at work one morning, allll my coworkers came by to see what that wonderful smell was. Oh, you know, just BREAKFAST FRIES!
Suuuure you could say “Kat, this is just eggs, bacon, and potatoes- a typical breakfast.” But to you I say, “guys….how much more fun is it if you call them french fries and pile everything together?? Way more fun. “ So you’ve got to try it! Also, this is my first time posting a recipe using the air fryer, I believe. But don’t worry, I have a recipe for oven fries that are delicious, so you’re welcome to use that instead.
Also, I like poached eggs for this because the yolks become like a sauce for the fries. But if fried or scrambled is more your style, do you, just make it delicious!
2 russet potatoes, cut into fries
4 strips of bacon
1T avocado oil
2t Burger Spice
2-4 eggs (depending how hungry you are)
2 green onions, sliced
Pre-heat your air fryer to 350 degrees, and pre-heat the oven to 375.
Toss your sliced potatoes with the avocado oil so they’re well coated.
Put the potatoes in the air fryer for 10 minutes.
Lay out the bacon on a baking sheet and cook for 10-12 mins in the oven, or until it’s as crispy as you want it. Remove it to a paper towel to absorb some of the fat, then slice into bite-sized pieces.
When the fries are done, put them in a bowl and toss with 2t of Burger Spice. Then put them back in the air fryer.
Increase the air fryer heat to 390 and cook the fries for 8-10 more mins, until crispy.
While the potatoes finish, cook your eggs however you’d like to.
When everything is done, dump your fries onto a plate, sprinkle the bacon on top, then top it with your eggs, and finally sprinkle the green onions over everything. Dig in!
