A while back a took a poll on Instagram to ask if you guys wanted savory or sweet breakfast ideas. It was close, but savory won and I posted my Waffle Breakfast Strata, and I’m still LOVING it. It’s really so delicious. If you haven’t tried it yet, you’ve got to!
But now, it’s time for the sweet version. Let me tell ya, this one is good too. We ate nearly the whole batch at once when I made it the first time. Oops. This is the perfect mash-up of 2 breakfast favorites, blueberry waffles and french toast. Once again I’ve used my super versatile Crispy Grain-Free Waffles, soaking them overnight with a creamy, lightly sweetened egg base and then bake it to custardy, crispy perfection.
My mom helped me prepare this, and if you know anything about her, you know that means we ended up with a healthy portion of pecans on top. I tend to agree that pecans are the perfect topping on nearly everything. On this dish the pecans add a lovely crunch on top to contrast the soft filling.
Like many of my dishes, I think they’re lovely enough to be part of your holiday, but also perfect for a weekly meal prep! Bake this once, and warm up servings all week long for breakfast. It goes perfectly with eggs, coffee, and lots of bacon. I hope you give this a try this winter.
Blueberry Waffle French Toast Bake
1 batch Crispy Grain-Free Waffles
3/4c cashew milk
1 1/2t cinnamon
1/4c maple syrup
1t vanilla extract
1c fresh blueberries
1/2c pecans, chopped
Cut the waffles into cubes and set aside to dry out a bit.
In a large bowl, whisk together the eggs, cashew milk, spices, maple syrup, and vanilla.
Add the waffle pieces and blueberries to a 3 qt. baking dish, then toss them to mix together.
Pour the egg mixture into the baking dish over the waffles. Push all the goodies down into the egg mixture, then cover the dish and refrigerate it for 2 hours to overnight.
When you’re ready to bake it, heat the oven to 350. Bake for 45 mins, then remove from the oven and top with the pecans.
Continue baking for another 15 mins, or until the middle is nearly set.
As it cools, it’ll set up a bit more. So, let it sit for about 30 mins before cutting into it.
