As this year ends, it's time of reflecting on everything the year has brought. It has been a difficult year in this world. I'm heartbroken nearly everyday about the crises happening on every corner of the globe: famine, war, mass shootings, hurricanes, terrorism, racism, sexual abuse, and hate. So much has happened that makes me feel frustrated and powerless. My only hope is that all of this pressure is turning coal into diamonds, and that we'll all come out on the other side of this a stronger, clearer, and more unified people.
Personally, this has been a year of tremendous growth. I started the year with going back to school to become a Nutritional Therapy Practitioner. It's a program I'd considered for a couple years, and I almost didn't do it. I am SO GLAD I decided to commit! In May I began writing recipes for Edible Baja Arizona's email newsletter. Just a couple weeks later on June 15th, I started this blog! It's only been 7 months, and already I've given so much to it, and really, it's become everything I'd hoped. It's been a lot (A LOT) of work, but also a lot of fun! It's given me creativity and purpose when I really needed it. In November, I graduated and officially became a certified Nutritional Therapy Practitioner (praise hands emoji!). Finishing the program was not easy, but I absolutely loved it! If you're considering the NTA program, please contact me. I'd love to chat about it, and answer questions. In November and December, some of my holiday recipes also got published on Edible Baja's blog. Then, on December 1st I released my first e-book, 7-day Restart.
All of this, in all of my accomplishments this year, I have put my whole self into it. I've given my time and energy and money and passion and lots and lots of dedication. That is what I'm most proud of. And now we're here, just days away from 2018, and I am posting my 81st blog post! 81! That's a lot, right? So thank you! Thank you for being here, coming to my live events, and following along on social media. The fact that you care about what I'm up to, and that you make my recipes means so much to me! I really, really appreciate you. Things are not always easy, but I begin 2018 with hope.
Now on to this sweet little beverage. New Years Eve is my Dad's birthday! Since he's impossible to buy gifts for (and we used all our good ideas at Christmas) his birthday can sort of get....swept under the rug. Now my parents can't stay up til midnight anyway, so we watch the ball drop at 10 and go to bed, but at least dad still gets a cake. If you happen to be having a party that actually includes staying up til midnight, you've got to make this drink. It's inspired by a cocktail I got at True Food Kitchen for my birthday, it was so good. I wanted to recreate it, and thought NYE was the perfect time since it's got prosecco in it. Bubbles and NYE just go together. I hope you give this sweet, floral drink a try and ring in the New Year in high style. Happy New Year!! I'll see you in 2018!
Blueberry Celebration Cocktail
2T hot water (not boiling)
4 mint leaves
1T lemon juice, fresh squeezed
1T orange juice, fresh squeezed
1T St. Germain
1 oz. vodka
2 oz. prosecco
- In a small bowl whisk together the honey and hot water to create a simple syrup, then set aside.
- In a jar, middle together the mint leaves, blueberries, lemon juice, orange juice, and 1T of the simple syrup.
- Put the remaining simple syrup in a sealed container and keep it in the fridge until you need it.
- Add the St. Germain and vodka, put the lid on and shake.
- Pour the mixture through a strainer over ice.
- Top it off with the prosecco.
For a party, multiply the first 8 ingredients by 12 (except the honey and water, multiply that by 3). Make the cocktail through step 5, straining the mixture into a pitcher. Add 1 bottle (750 mL) of prosecco and serve.
