If you haven’t heard, or looked outside, it’s already snowing in parts of the country. Yikes! Let’s all make these burgers and pretend we’re on a Hawaiian vacation. They’re a little sweet from the pineapple and a little spicy from the jalapeño. Add bacon and a creamy pineapple BBQ sauce, and why ever eat another burger again??
Here in Tucson we can pretty much grill year round, but if you live in one of those snowy places, you can definitely make these on the stovetop.
Now, before I removed gluten from my diet, I was a bread LOVER. Oprah and I are soul sisters. I was all about the bread. But once I went gluten-free, I quickly discovered that most gluten-free bread is not worth eating. It may be ok in certain situations, but it’s surely nothing crave-worthy. The one exception I make is for burgers. I personally prefer a gluten-free bun over a lettuce wrap. My husband is opposite, and is perfectly happy with a lettuce wrap.
Whichever way you go, this burger is great on lettuce or a bun. It also would be awesome, and totally tropical on tostones buns (see Dolly’s note at the bottom of her recipe here)! Dolly is the original creator of the tostones bun. She and I have different methods for making tostones, but check them out and see which works better for you!
To a medium bowl, add the ground beef, BBQ dry rub, and diced jalapeño. For a bit of spice, keep the seeds. If you’re very sensitive to spice, throw them out.
Mix the meat together and form in 4 equal patties.
Either grill the burgers, or cook them in a pan on your stove top until they’re done to your liking. I usually cook mine about 4-5 minutes per side.
In a small bowl, whisk together the BBQ sauce and mayonnaise.
On your lettuce leaves or buns, layer on the burger, BBQ sauce mixture, 2 pieces of bacon, and a scoop of the pineapple coleslaw, then feel the island breeze in your hair and dig in!
