Well hello, there! Are you a hot drink person or a cold drink person? I nearly always prefer a cold drink. I generally drank iced coffee all summer and then transitioned to hot lattes in the winter. However, this year I found myself drinking cold brew coffee all winter long. I never transitioned back to hot and I've been happy as a clam!
This week I'm in Arizona visiting my parents, and the heat down here is no joke. I personally don't think it's "worse" than other parts of the country, I mean it's been hot everywhere this week. Soaking up all this sun has got me craving cold drinks more than ever.
This summer I took my usual cold brew coffee up a notch, by making it Affogato style! This deserves all the heart eyes emojis. An Affogato is a traditional Italian treat, where a shot of espresso is poured over some vanilla ice cream. Heaven! The hot espresso melts some of the ice cream, and the ice cream sweetens the espresso. It's a mutually beneficial situation.
For this summer version, we're skipping the hot espresso all together. This milkshake is a (dairy-free) vanilla milkshake, topped with some cold brew coffee. They sort of swirl together and make a delicious coffee, vanilla, milkshake, ice creamy treat. I think you're gonna love it. I mean, it's a milkshake...what's not to love?! And, it only requires 4 simple ingredients, so you can throw it together anytime!
1c dairy-free vanilla ice cream
1/2t vanilla extract
6T dairy-free nut milk (I used homemade cashew milk)
3T cold coffee
- Add the ice cream, vanilla extract, and nut milk to a blender, and blend until smooth and creamy.
- Pour the shake into a glass.
- Over the top of the shake, pour the coffee. I won't judge if you toss some Kahlua in there, too.
- Stick a straw into the shake and enjoy!
