Is there anything better than a sweet, juicy summer peach?? You know they're good when they're so fragrant you can smell them by just walking by. Yum! I'm salivating just thinking about it. I created this recipe for Edible Baja Arizona, and it feature all the best of the season: Easter Egg Radishes, fresh peaches, crispy Napa Cabbage, and crunchy pistachios.
The dressing for this slaw is made with Tucson Olive Central's Strawberry Peach White Balsamic Vinegar. It is so delicious that I could drink it straight from the bottle. It's also naturally sweet enough that you don't need any other added sweeteners for this slaw! If you're in AZ, track this down in Tucson, Scottsdale, or Tubac. It is so worth it. If you're not in the area, you can substitute some peach jam mixed with some white balsamic vinegar. Look for a jam that is made with just fruit, and avoid anything made with corn syrup.
