This recipe is a classic! At least it is if you grew up in the midwest going to church potlucks and Pizza Hut salad bars! I actually really like peas. And I really like bacon. So that means, I really like this salad.
One of the best things about this salad is that it lasts for days in the fridge without getting weird or mushy like other salads. That makes this a great candidate for meal prep days. Throw this together, and it will stay great for most of the week.
Second best thing about this salad? It is a complete cinch to throw together. It requires just 7 simple ingredients. If you keep a bag of peas in the freezer, you probably already have all the other ingredients on hand. You can throw this together for any weeknight, or double the recipe for your next church potluck! There's something about the sweet peas mixed with salty bacon, everyone happily gobbles it up.
