All my vegetarians, let me hear you say Heeeeey-o! This one goes out to you! I love having the opportunity to create recipes for Edible Baja Arizona for so many reasons. One of those reasons is that I have the flexibility to create some recipes that are a bit outside my "normal" paleo recipes. While I firmly believe in a paleo template as a healthy diet, I also acknowledge that a wider audience may not subscribe to those beliefs, and that's fine.
So this tasty taco actually is paleo (the way I made it, with Siete brand grain-free tortillas), but it could also be gluten-free, or it could include wheat. It can be vegan (sub beans for the egg), or throw some bacon on there for some meat. That's the beauty of tacos- they can be whatever the heck you want them to be! This one transforms normal caulirice into amazing cauliflower chorizo!
For my chorizo, I used Santa Cruz Spice Company's chorizo mix (call them to order any of their super fresh spices) since they're local to Baja Arizona. However, you could also use a different brand, or make your own.
To really make this chorizo taco a treat, add a runny egg, some sliced or mashed avocado, and a little cheese (if you can handle it). Divine, I tell you. These will not disappoint. However, this recipe only makes 2 tacos, so for more people, double or triple the recipe!
