Sometimes you need to throw together a quick salad dressing, and you don’t want to make a trip to the grocery store to do it. Not every salad is an event, with perfectly curated veggies and a delightful blend of oil, vinegar, and fresh herbs. Those salads are delightful, but we've all had a salad that is equivalent to the fridge getting thrown into a bowl. That is what this dressing is for. Weeknights. Work lunches. I have the ticket for you! This dressing comes together in literally one minute just using some basic pantry items. It is really the ratios that matter most, not the exact ingredients. So if you don’t have one ingredient or another, substitute it with what you’ve got! Feeling fancy? Throw in some fresh herbs, citrus zest, poppy seeds, whatever floats your boat.
I prefer making this in a mini blender to really emulsify the oil. Blending gives the dressing a more creamy texture. That said, shaking everything up in a jar will definitely work just fine. Remember, we're going for ease here, not perfection! Now let's get down to biznass.
One Minute Vinaigrette
1/2c extra virgin olive oil
1/4c balsamic vinegar
1t dried basil
1t maple syrup (optional)
1/2t garlic powder
pinch each salt and pepper
- Blend all ingredients in a small blender until everything is emulsified and creamy. Alternatively, shake the ingredients together in a jar or blender bottle.
