What are you supposed to do with a whole watermelon? There’s just so much of it! I don't own a bowl big enough to hold an entire chopped watermelon. It hardly even fits in my fridge. But in the middle of summer, this sweet, cold salad is hard to beat. Juicy watermelon, and sweet, tender berries, this is just begging to be served at your next cookout. The honey, lemon, and mint create a flavorful syrup that coats the fruit. This salad will be loved by adults and kids.
A bit about nutrition: Watermelon is loaded with...well....water. It's over 90% water, which helps us stay hydrated during those sweaty summer days. Much of the "water" we get each day actually comes from our food rather than what we drink. But, watermelon is not just water. It has a significant amounts of both vitamin B6 and vitamin C. The strawberries, watermelon, and lemon juice are all packed with antioxidants. So this salad is not only delicious and hydrating, it is also replenishing. That is just what we need on those hot summer days.

Watermelon Strawberry Salad
2c fresh strawberries
1T raw honey
juice from 1/2 lemon
3 sprigs fresh mint, minced
- Core and chop the strawberries into bite sized pieces. Place them in a large serving bowl.
- In a small bowl, combine the lemon juice, mint, and honey. Pour it over the berries, and stir until they are evenly coated. Let the berries sit while you prepare the watermelon.
- Cube the watermelon, and add to the strawberries. Stir everything to combine.
- This is tastier when it is made in advance and the flavors have time to mingle before serving, but it can also be served right away.
