HI! I’m Kat. I’m the writer, recipe creator, and eater behind I’d Eat That Food. After dealing with digestive issues for a lifetime, and getting no help from doctors, in 2013 I finally started doing my own research into healing. I was literally sick of being sick every single day, and I was desperate for answers. I’d gone to doctor after doctor for more than 20 years, and not a single one provided a helpful diagnosis or treatment.
I began to realize what a profound impact our food choices have on our overall health, and decided to try a 10-day elimination diet. After initially removing dairy and gluten from my diet, I was finally able to find some healing. I began to feel "normal" for the first time in years! The more I learned about health and nutrition, the more I wanted to know. That eventually lead me to the Nutritional Therapy Association, and their Nutritional Therapy Practitioner program, which I completed in November of 2017.
What is Nutritional Therapy?
Western medicine only recognizes states of health, and states of disease. Once you find yourself in a disease state, they prescribe medicine to help manage symptoms. Nutritional Therapy Practitioners recognize all of the gray area in between optimal health and disease. Nutritional Therapy Practitioners work with clients to help them gain optimal health, hopefully preventing disease. We use food as medicine, and focus on root causes rather than symptoms. Nutritional Therapy Practitioners are not doctors, but can work in conjunction with both Western doctors, functional doctors, chiropractors, and other healers to help improve your overall health and vitality.
So, uh....what do you eat?
My personal diet can seem restrictive to some, but as you will see from the recipes on my blog, I eat lots of delicious food that makes me happy and makes me feel my best! Every body is different, but my hope is that these recipes will help you find healing of both your body and soul, without having to sacrifice delicious food. Remember we are all on a health journey that lasts our entire lifetime. Wherever you are today, embrace it and continue toward feeling your best.

Do you find yourself where I was in 2013? Sick, tired, with no answers? I am here to help. I wrote an e-book called 7-Day Restart to help people refocus their diets to regain their health. Working through this book can be a great place to start! It has recipes for 7 days of healthy, healing food, as well as a cooking timeline, a shopping list, helpful eat/avoid food lists, and lots of nutrition information. But, I know that 7 days won't be enough for everyone, sometimes you need someone to take a more in-depth look at your signs and symptoms to really figure out what is going on with your body. As a Nutritional Therapy Practitioner, that is exactly what I do! I know that in my life, my healing has required more than just changing my diet (although that was a huge step and catalyst for everything else).
